My cousin called me one afternoon asking if I could bring samosas to her dinner party, and I realized my deep fryer days were behind me. So there I was, staring at my air fryer, wondering if those golden, crispy triangles I grew up sneaking from my mother's kitchen could actually work in this compact machine. They did, and better than I expected. Now whenever someone bites into one of these, that satisfying crunch followed by the warm, spiced potato filling inside reminds me why samosas are more than just appetizers—they're moments of joy wrapped in dough.

I made these for a potluck at work, and the funny thing was watching people's faces light up when they realized they were air fried. One colleague asked me for the recipe right there in the break room, samosa still in hand, chutney on his lip. It sparked this whole conversation about the food we miss from our childhoods, and suddenly everyone was sharing their own comfort food stories. That's when I knew this recipe had legs.

Ingredients

  • All-purpose flour: This is your dough foundation, and the key is not to skimp on kneading—it develops the gluten that gives you those light, flaky layers.
  • Vegetable oil: Split between the dough and brushing the samosas before air frying; it's what makes everything golden and keeps the texture crisp.
  • Potatoes: The backbone of your filling, and boiling them slightly before mashing means they're tender enough to season properly without turning to mush.
  • Cumin seeds: Toast these in hot oil first to release their nutty aroma—it transforms the entire filling into something aromatic and layered.
  • Garam masala and turmeric: These warm spices are what make samosa filling taste like samosa filling; don't use stale versions from the back of your cabinet.
  • Fresh mint and cilantro: The chutney lives or dies on the quality and freshness of these herbs, so choose the brightest bunches you can find.
  • Green chili: This brings heat and brightness; adjust the amount based on your tolerance and the specific chili's temperament.

Instructions

Build Your Dough Base:
Combine flour and salt, then work the oil in with your fingertips until it looks like breadcrumbs—this is actually relaxing if you let it be. Add water gradually while kneading until you have a smooth, slightly firm dough that doesn't stick to your hands.
Prepare the Vegetable Filling:
Boil your potatoes, peas, and carrots until they're just tender, then drain well so excess moisture doesn't make your filling soggy. Toast the cumin seeds in oil until fragrant, add your aromatics, cook them soft, then fold in the spices and cooked vegetables—taste as you go because salt levels matter.
Shape Your Samosas:
Roll dough thin, cut circles or ovals in half, then wet the straight edge and form a cone—this takes practice, so don't stress if the first few look wonky. Fill each with about two tablespoons of filling, then seal the top by pinching the edges together like you're closing a little envelope.
Air Fry to Golden Perfection:
Lightly brush each samosa with oil, arrange them in the basket without stacking, and let the air fryer work at 375°F for 15 to 18 minutes, turning halfway through. You'll know they're done when they're deep golden and sound crispy when you tap them.
Make the Mint Chutney:
Blend your herbs, chili, ginger, and lemon juice into a smooth paste, adding water until you reach the consistency you want. Taste it and adjust—sometimes you need more salt, sometimes more lemon, and that's perfectly fine.

My daughter sat at the kitchen counter while I was shaping these, asking question after question about where samosas come from and why they're shaped like triangles. By the time we pulled them golden from the air fryer, she felt like she'd made them herself. That's the magic of recipes like this—they're not just food, they're little gateways to conversation and learning.

Dough Texture is Everything

The difference between a dough that rolls beautifully and one that tears or springs back lies in how much you knead and how long you rest it. I used to rush through the resting phase, thinking I was saving time, but that twenty minutes is when the dough actually becomes cooperating and easy. Your hands will thank you, and your samosas will look more professional too.

The Filling Shouldn't Be Wet

This is the most common mistake I see—a filling that's too moist will make the dough soggy and your samosas won't stay crispy no matter how hot your air fryer gets. Make sure to drain your cooked vegetables thoroughly, and let the filling cool before assembling so any steam evaporates. The filling should be thick enough to hold its shape when you scoop it, almost like a soft potato salad.

Why the Air Fryer is Your Friend Here

Traditional deep-fried samosas are incredible, but they require a lot of oil and constant attention so they don't burn or absorb too much grease. The air fryer gives you that crispy exterior with just a light brush of oil, plus you can walk away without worrying about splatters or smoke. It's one of those kitchen moments where modern technology actually respects tradition instead of compromising it.

  • Brush the samosas lightly before air frying—a little oil goes a long way and prevents them from drying out.
  • Don't skip turning them halfway through; it ensures even browning on both sides.
  • Let them cool for a minute after coming out of the air fryer so the exterior stays crisp when you bite in.

04 1 inch piece ginger
05 2 tablespoons lemon juice
06 1 teaspoon sugar
07 1/2 teaspoon salt
08 2 to 3 tablespoons water, as needed

How to Make It

Step 01

Prepare the Dough: In a mixing bowl, combine flour and salt. Add vegetable oil and rub between your fingers until the mixture resembles fine breadcrumbs. Gradually add water while mixing and knead until a smooth, firm dough forms. Cover the dough and let it rest for 20 minutes.

Step 02

Make the Vegetable Filling: Boil potatoes, peas, and carrots until tender, then drain and lightly mash. Heat oil in a pan over medium heat, add cumin seeds until fragrant. Sauté onion, ginger, and green chili until softened. Stir in ground coriander, garam masala, turmeric, and chili powder. Add the mashed vegetables and cook for 2 to 3 minutes. Fold in cilantro and allow the filling to cool completely.

Step 03

Shape the Samosas: Divide the dough into 6 equal balls. Roll each ball into a thin oval shape. Cut each oval in half lengthwise. Form a cone with each half by wetting the edges with water to seal. Fill each cone with approximately 2 tablespoons of vegetable filling. Pinch the open edge closed to seal completely.

Step 04

Air Fry the Samosas: Preheat the air fryer to 375 degrees Fahrenheit. Lightly brush each samosa with vegetable oil. Arrange samosas in the air fryer basket in a single layer without overcrowding. Air fry for 15 to 18 minutes, turning once halfway through, until golden brown and crisp.

Step 05

Prepare the Mint Chutney: Add mint leaves, cilantro leaves, green chili, ginger, lemon juice, sugar, salt, and water to a blender. Blend until a smooth paste forms. Adjust seasoning and consistency with additional water or salt as desired.

Step 06

Serve: Transfer hot samosas to a serving plate. Serve with mint chutney on the side for dipping.
